Smothered Cabbage

This is great and I don’t even miss the fact that there is no meat in it!
Ingredients
1 head of cabbage cut into bite-sized pieces
1 green pepper cut into bite-sized pieces
1 yellow onion cut into bite-sized pieces
Red pepper flakes
Olive oil
1+ cup of vegetable broth (made from sodium-free bullion)
Cajun Spice
(Notes: You can substitute a bag of frozen peppers and onions for slicing it yourself to save time. Cajun spice is a generic spice that is sold in my local Kroger grocery store, find what you can at your local store.)
Directions
Shred/cut up cabbage head and rinse in sink. Put in a colander to drain the water.
Put 2 table spoons of oil in the pan and heat. When hot add the onions, green pepper and pepper flakes to season and sauté. Sprinkle generously with the Cajun spices.
Add the cabbage to the sautéd vegetables a little at a time and allow each addition to cook down before adding the next addition. When you add the cabbage, drizzle a bit of olive oil on top of the pile and add some of the Cajun spice. Continue to do this until all the cabbage is incorporated into the pot.
Add vegetable broth to the pot. Do not add so much that it starts to look like soup, just enough to go up about ½ an inch of the pot. Continue to stir the cabbage.
Cover the pot and allow to simmer 20 minutes or so. Check to make sure you don’t need to add more vegetable broth (if you run out, just use water).
